Nigella's pavlovas, such as Lemon Pavlova, contain cornflour in the meringue. The cornflour helps the meringue to stay soft in the centre. If you are allergic to corn then we understand that you can use potato starch as an alternative. We would suggest substituting it on a 1 for 1 basis. Unfortunately we haven't tried this substitution ourselves, so can't guarantee the results.

No, traditional meringues do not contain cornflour. The cornflour and vinegar that is added to pavlova strengthens the egg white and makes it more stable. Traditional meringues can be the most tricky.

Cornflour is also often added. The cornflour acts as a stabiliser, preventing the meringue mixture from collapsing and also soaking up any additional moisture, limiting the amount of weeping. I find it a useful addition to soft meringues but counterproductive in harder versions. Dependant upon what you intend to use the meringue for, I’d suggest you add either the cornflour OR the lemon juice. Ingredients 4 Egg Whites 200g Castor Sugar 2 tsp Cornflour OR 1 tsp Lemon Juice (optional)
